Turkey and Zucchini Poppers
These yummy turkey and zucchini poppers are packed with irresistible Mexican flavors and make a delicious low-carb meal. They are a fun way to get in some extra veggies, especially for any picky eaters out there. And just because they are simple to make doesn’t mean they aren’t full of flavor—when you dip them in Walden Farms Creamy Bacon Dressing or Chipotle Ranch Dressing? Mind-blowingly delicious.

Ingredients
1 lb lean ground turkey
3 TBSP chopped, fresh cilantro
1 large clove garlic, minced
2 cups grated zucchini, squeezed tightly in a towel to remove excess water
¼ cup chopped green onions
1 tsp salt
½ tsp black pepper
1 TBSP olive oil
Instructions
- Line a large plate or platter with parchment paper and set aside.
- In a medium bowl stir together the turkey, cilantro, garlic, zucchini, green onions, salt and pepper until combined. Scoop out a rounded tablespoon of the turkey mixture and shape it gently with your hands into an oval popper. If it sticks too much, wet fingers with water before shaping. Place on the prepared plate and repeat with remaining turkey mixture.
- Heat the olive oil in a large skillet set over medium heat. Place poppers, evenly spaced, around the hot skillet and cook until browned, about 3 minutes. You may need to cook in batches. Gently flip and cook each side until golden brown, about 5 minutes more. Remove to a paper towel lined plate and repeat until all of the poppers are cooked. Serve immediately.
Tips
Serve with Walden Farms Creamy Bacon Dressing mixed with a little Frank’s Hot Sauce for dipping!
