Smooth and Bold Blueberry Protein Ice Cream

Simple and delicious, this blueberry protein ice cream has a hefty amount of protein to make this treat both tasty and healthy! It’s also packed with healthy fats and phytonutrients to fill you up while giving your body a big nutritional boost!

Ingredients

1 cup low-fat cottage cheese
1 medium banana, sliced
1/2 cup vanilla whey protein powder
1/4 cup unsweetened, dried blueberries
1/4 cup fresh blueberries

Instructions

  1. Add cottage cheese, banana, and protein powder in a food processor fitted with a steel blade. Process until smooth. Transfer to an airtight container.
  2. Stir in the dried blueberries. Cover and freeze for 45 minutes. Remove the container and give it a quick stir to re-incorporate the berries. Cover and freeze again for an additional 45 minutes.
  3. Once the ice cream consistency is to your liking, remove the container from the freezer, stir again, then divide the blueberry protein ice cream between 2 serving bowls. Top each with the fresh blueberries and serve!

Blueberry protein ice cream tips

The 90 minutes freezing time allows for a soft serve type of ice cream. If you leave it in the freezer for much longer than 90 minutes and it becomes very hard, allow it to thaw at room temperature for 10-15 minutes before serving.
