Broccomole
Who needs avocados? While we all love guacamole (and we’re sure you do too!), this broccomole dip is a tasty stand-in. This recipe isn’t to replace that traditional guac. It’s about having a different, lower-calorie green dip with more protein and less fat.
This dip is loaded with vitamins, minerals, and antioxidants and packs a nutrient-dense punch. Broccoli has been shown to help reduce inflammation and cell damage while supporting immune health, brain function, and heart health. Ingredients
1 bag ShiftSetGo Ranch Crisps
3 cups chopped broccoli
1 jalapeño, chopped
2 TBSP green onion
1 tsp olive oil
2 oz silken tofu
1/4 tsp chili powder
1 TBSP cilantro
1/4 tsp sea salt
1/4 tsp black pepper
1/4 tsp garlic powder
Instructions
- In a large pot, Fill a large pot about halfway with water. Add a light amount of salt.
- Add the broccoli and cook on medium heat until very soft and easily falls apart.
- Drain the broccoli well. Transfer to a food processor or blender.
- Add jalapeños, green onion, olive oil, tofu, and all remaining seasonings. Blend well until smooth.
- Serve right away.
Tips
To get in even more veggies, add in some diced tomatoes and raw red onions.
To save time, you can use pre-packaged broccoli or use your microwave to steam cook the broccoli. If using a microwave, add a little water and the broccoli to a bowl and microwave until tender. Be sure to cover it before cooking!
