Ingredients
- 1 ShiftSetGo Shortbread Bar
- 1 cup Rhubarb compote (see recipe)
- 1 ShiftSetGo Vanilla Pudding & Shake Mix
- 1 ShiftSetGo Mix
- 1 oz almond or skim milk
- 3 oz water
- ½ tsp lemon zest
- 6 drops lemon Stevia or ½ tsp lemon extract
Instructions

Preheat oven to 350 degrees.

In a small bowl, mix together SSG mixes, Stevia, and baking powder.

Add in remaining ingredients. Mix together to form a batter. Do not add water.

Pour batter into a greased or lined cupcake tin.

Bake for 11-13 minutes or until a toothpick inserted into the centers come out clean.

Yields 6 muffins.
