Carrot Cake Bites with Creamy Cheesecake Frosting

Ingredients

1 packet ShiftSetGo Carrot Cake Mix
4 TBSP water
1 egg white

Frosting

1 packet ShiftSetGo Creamy Cheesecake Mix
2 TBSP water

Instructions

  1. Preheat your oven to 350°.
  2. Mix Carrot Cake Mix with water and egg white.
  3. Pour into a mini cupcake tin, silicone is great for non stick (mix should make 6 mini cupcakes).
  4. Bake for approx. 11 minutes, careful not to over bake.
  5. While cupcakes are baking, make the frosting.
  6. Mix the Creamy Cheesecake Mix with water to create a thick frosting. 
  7. Set in fridge to cool and harden.
  8. Once cake is done and has cooled a bit, spread frosting over top.

Carrot Cake Bites tips

Add an optional sprinkle of cinnamon or nutmeg to the top of the mini cupcake.
