Carrot Cake Bites with Creamy Cheesecake Frosting

Ingredients
1 packet ShiftSetGo Carrot Cake Mix
4 TBSP water
1 egg white
Frosting
1 packet ShiftSetGo Creamy Cheesecake Mix
2 TBSP water
Instructions
- Preheat your oven to 350°.
- Mix Carrot Cake Mix with water and egg white.
- Pour into a mini cupcake tin, silicone is great for non stick (mix should make 6 mini cupcakes).
- Bake for approx. 11 minutes, careful not to over bake.
- While cupcakes are baking, make the frosting.
- Mix the Creamy Cheesecake Mix with water to create a thick frosting.
- Set in fridge to cool and harden.
- Once cake is done and has cooled a bit, spread frosting over top.

Add an optional sprinkle of cinnamon or nutmeg to the top of the mini cupcake.
