Ingredients
- 1 ShiftSetGo Blueberry Pancake
- 1 ShiftSetGo Apple & Cinnamon Oatmeal mix
- ½ tsp baking powder
- ¼ tsp baking soda
- 1 tsp cinnamon
- 1 egg
- 2 tbsp Walden Farms (WF) Blueberry Fruit Spread, melted or WF Blueberry Syrup
- 2 tsp grape seed oil
- ½ cup rhubarb, finely diced

Preheat oven to 350 degrees.

In a small bowl combine both SSG mixes, baking powder, baking soda, and cinnamon. Mix well. Set aside.

In another small bowl mix egg, WF fruit spread or syrup, grape seed oil, and rhubarb. Let sit for about 10 minutes for the blueberries to hydrate.

Mix wet ingredients into the dry ingredients to form the batter. Let sit for about 10 minutes for the blueberries to hydrate.

Spoon into a lightly oiled/cooking-sprayed mini-muffin tin, donut pan, or cake pop pan.

Bake 20-25 minutes or until a toothpick comes out clean when inserted into the center.
Tips
