Lemon Shortbread Rhubarb Dessert

Ingredients
- 1 ShiftSetGo Shortbread Bar
- 1 cup Rhubarb compote (see recipe)
- 1 ShiftSetGo Vanilla Pudding & Shake Mix
- 1 oz almond or skim milk
- 3 oz water
- ½ tsp lemon zest
- 6 drops lemon Stevia or ½ tsp lemon extract
Instructions

In 2 small dessert cups, shave the shortbread bar into the bottoms (veggie peeler works well).

Spoon rhubarb compote over the shaved bar.

In a small bowl, whisk together the vanilla mix, milk, water, lemon zest, and Stevia/extract.

Spoon over rhubarb compote and garnish with lemon zest and diced rhubarb if desired.

Place in fridge to set.
