Lemon Shortbread Rhubarb Dessert

Ingredients

  • 1 ShiftSetGo Shortbread Bar
  • 1 cup Rhubarb compote (see recipe)
  • 1 ShiftSetGo Vanilla Pudding & Shake Mix
  • 1 oz almond or skim milk
  • 3 oz water
  • ½ tsp lemon zest
  • 6 drops lemon Stevia or ½ tsp lemon extract

Instructions

    In 2 small dessert cups, shave the shortbread bar into the bottoms (veggie peeler works well).

  2. 2

    Spoon rhubarb compote over the shaved bar.

  3. 3

    In a small bowl, whisk together the vanilla mix, milk, water, lemon zest, and Stevia/extract.

  4. 4

    Spoon over rhubarb compote and garnish with lemon zest and diced rhubarb if desired.

  5. 5

    Place in fridge to set.
