High Protein Blueberry Pancakes

Nothing beats a hearty blueberry pancake to start the day off right, except a blueberry pancake that not only tastes like the real deal but has no sugar and enough protein to keep you full for hours!

Serves: 1

Prep time: 10 minutes 
Cook time: 8 minutes

Ingredients 
1/4 cup egg whites (around 4 large eggs)
1 scoop (25g) unsweetened vanilla whey protein powder
1/2 banana, mashed
1 TBSP almond milk, if needed
1/4 cup fresh or frozen blueberries
1/2 tsp coconut oil 

Instructions 

  1. In a medium bowl, whisk together the egg whites and protein powder.
  2. Add the mashed banana and stir to combine. If the batter is too thick (it should resemble a thick pancake batter), then add the almond milk and stir until combined.
  3. Fold in the blueberries.
  4. In a medium skillet set over medium heat, melt the coconut oil. Pour the batter into the pan and cook until edges are bubbling and bottom has browned, about 5 minutes. Flip it over and continue to cook until browned and cooked through, 2-3 minutes more. Serve with your favorite toppings.

Tips: 
You can make 1 large pancake or 2-3 smaller ones.  The smaller pancakes will cook faster than the larger one.
