Red Cabbage Rolls

Red Cabbage Rolls

Ingredients

  • 3 large red cabbage leaves (12-47 oz = 1 cup)
  • ½ cup mushrooms, sliced
  • ½ cup celery, diced
  • ½ cup spinach, roughly chopped
  • 4 oz 97% lean ground beef
  • ½ tsp dried or 1 tbsp. fresh basil
  • Sea salt & pepper, to taste
  • 2 tbsp. Walden Farms Honey BBQ or Marinara Sauce

Instructions

    Preheat oven to 350 degrees.

    Bring water to a boil in a medium saucepan over medium heat. Drop cabbage leaves into boiling water. Boil until wilted. Remove from water and lay on paper towels.

    In a skillet with cooking spray, add mushrooms and celery. Cook until slightly tender. Add spinach and cook down.

    Remove veggies from pan and set aside.

    Add meat into same pan. Brown over medium heat.

    Once fully cooked remove from heat and mix in veggies.

    Lay cabbage leaves flat and fill with meat mixture.

    Fold sides up, roll, and place in a baking dish.

    Bake for 15-20 minutes.

    Brush with BBQ or Marinara sauce before and during baking.

Tips
