Asparagus Mockamole

Ingredients
- 2 cup Asparagus, blanched for 10 min, cooled
- Lime juice
- ½ cup onion, diced
- ½ cup Roma tomatoes, diced
- 1 tbsp cilantro, chopped
- 1 clove garlic, minced
- ½ jalapeno seeded, minced
- ½ tsp cayenne
- ½ tsp ground cumin
- ½ tsp each sea salt and pepper
- 1 tbsp olive or grapeseed oil
Instructions

In a food processor, ninja or bullet blender, process the asparagus and lime juice until smooth; set aside.

In a small bowl, combine all other ingredients. Mix well.

Fold the smooth asparagus in and mix well.

Serve immediately.
