Ingredients
- 1 cup chopped bell peppers (all colors)
- 4 cloves garlic, minced
- 2 cups riced cauliflower
- 2 cups zucchini, diced
- 1 14 oz container fresh salsa
- 1 15 oz can fire-roasted tomatoes
- 16 oz chicken breast, pre-cooked and shredded
- 4 cups chicken bone broth
- Fresh cilantro
- Salt and pepper, to taste
Instructions

Prep all veggies and chicken.

Place all ingredients in a large soup pot.

Bring to a boil, add desired spices, and lower heat.

Simmer until veggies are tender, 15-20 minutes.
