Chicken Salsa Soup

Chicken Salsa Soup

Ingredients

  • 1 cup chopped bell peppers (all colors)
  • 4 cloves garlic, minced
  • 2 cups riced cauliflower
  • 2 cups zucchini, diced
  • 1 14 oz container fresh salsa
  • 1 15 oz can fire-roasted tomatoes
  • 16 oz chicken breast, pre-cooked and shredded
  • 4 cups chicken bone broth
  • Fresh cilantro
  • Salt and pepper, to taste

Instructions

    Prep all veggies and chicken.

    Place all ingredients in a large soup pot.

    Bring to a boil, add desired spices, and lower heat.

    Simmer until veggies are tender, 15-20 minutes.

    Scoop into a bowl and top with some suggestions below.

Tips
