Chicken Poppers

Chicken Poppers

Ingredients

  • 1 lb ground lean ground chicken
  • 3 ½ cups grated zucchini
  • ½ cup green onions, diced
  • 3-4 tbsp. cilantro, minced
  • 1-2 cloves of garlic, pressed
  • ½ tsp cumin
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 jalapeno, diced (optional)
  • 2 tsp olive oil

Instructions

    In a medium bowl combine chicken, zucchini, green onion, cilantro, cumin, salt, pepper, and jalapenos. Mix well.

    Add olive oil in a large skillet over medium heat.

    Use a small scoop or a heaping tablespoon to put the meat mixture evenly in the pan.

    Cook for about 5-6 minutes per side.

    Flip and cook the other side until golden brown and cooked all the way through.

Tips
