Zucchini Taco Boats

Zucchini Taco Boats

Ingredients

  • 6 oz ground beef or turkey, lean
  • 2 tbsp. taco seasoning, homemade
  • 1 tbsp. hot sauce
  • 1 tbsp. green chilies
  • 1 garlic clove, crushed
  • (2) 8-inch zucchinis, hollowed out
  • 1 jalapeno pepper, diced
  • 2 tbsp. red onion
  • ¼ cup tomatoes, diced
  • ¼ cup colored peppers, diced

Instructions

    Preheat oven to 350 degrees.

    In a medium skillet brown meat.

    Add taco seasoning, hot sauce, green chillies, and garlic.

    Fill your taco zucchini boats with meat mixture.

    Place on a lined baking tray or casserole dish and bake for 30 minutes.

    Remove from oven and top with jalapeno, red onion, tomatoes, and colored peppers.

Tips
