Thai Shrimp Cauliflower Rice Bowl

Thai Shrimp Cauliflower Rice Bowl

Ingredients

  • 8 oz of shrimp
  • 2 tsp olive oil
  • ½ cup snow peas
  • ½ cup red peppers, sliced
  • 1 garlic clove, pressed
  • 1 tbsp. Walden Farms Maple Syrup
  • ½ tsp fresh ginger
  • 1 tsp lime zest
  • 1 tbsp. cilantro, chopped
  • 1 tsp chilies
  • 1 jalapeno, diced
  • Sea salt and pepper, to taste
  • 2 cups cauliflower or broccoli rice

Instructions

    In a medium skillet saute shrimp until cooked. Remove from pan.

    Add 1 tsp. olive oil, snow peas, and red pepper.

    Cook until tender. Set aside.

    Add 1 tsp. of olive oil and garlic until fragrant.

  5. 5

    Slowly mix in maple syrup, ginger, lime, lime zest, cilantro, chilies, jalapenos, and salt and pepper.

    Toss in shrimp and veggies.

    Pour over 2 portions of prepared cauliflower rice.

    Serve with a lime wedge.

Tips
