Spicy Chipotle Grilled Shrimp

Spicy Chipotle Grilled Shrimp

Ingredients

  • 3 garlic cloves, minced
  • 1-2 tbsp. chipotle peppers, chopped
  • 1 lemon, juiced
  • 1 tbsp. olive oil
  • 1 tbsp. fresh cilantro, chopped
  • ¼ tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp sea salt
  • ½ tsp crushed red pepper
  • 2 lbs medium shrimp, uncooked, peeled, and deveined
  • Lemon wedges

Instructions

    In a medium bowl combine garlic, chipotle peppers, lemon juice, olive oil, cilantro, and all spices.

    Add shrimp. Toss to coat.

    Refrigerate for 30 minutes.

    Preheat grill to medium-high. Brush with olive oil.

  5. 5

    Remove shrimp from marinade. Thread skewers with 5-6 shrimp per stick.

    Lay on grill and cook until shrimp turns pink and opaque in center (about 2 minutes each side).

    Remove from heat and divide into 4 servings.

    Garnish with lemon wedges.

Tips

Serve with cilantro lime cauliflower rice to add a veggie or prepare the SSG Orzo pasta to add a Shift meal. This is a great meal to prep ahead of time and enjoy over the next few days. SSG notes (per serving) Protein: 2 Daily Oil: 1/4
