Southwestern Salad

Southwestern Salad

Ingredients

  • 4 oz ground beef, chicken, or pulled pork
  • ¼ cup riced cauliflower
  • Mixed greens
  • ¼ cup chopped yellow and red peppers
  • ¼ cup chopped tomatoes
  • ½ cup fresh salsa
  • 1 tbsp. avocado-oil mayo
  • Fresh lime juice
  • Fresh cilantro

Instructions

    Cook meat in a skillet and set aside.

    Steam riced cauliflower. Set aside to cool.

    Place greens in a large bowl. Add meat, peppers, tomatoes, and riced cauliflower.

    In a small bowl, mix together salsa, mayo, lime juice, and cilantro.

    Pour mixture on top of salad.

Tips

Add a little hot sauce, jalapenos, or chili lime seasoning to your dressing for a little kick. Add a hard-boiled egg for an extra 2 oz. of daily protein. SSG notes (per serving) Protein: 1 Veggies: 2 Daily Oil: 1
