Ingredients
- 4 oz ground beef, chicken, or pulled pork
- ¼ cup riced cauliflower
- Mixed greens
- ¼ cup chopped yellow and red peppers
- ¼ cup chopped tomatoes
- ½ cup fresh salsa
- 1 tbsp. avocado-oil mayo
- Fresh lime juice
- Fresh cilantro
Instructions

Cook meat in a skillet and set aside.

Steam riced cauliflower. Set aside to cool.

Place greens in a large bowl. Add meat, peppers, tomatoes, and riced cauliflower.

In a small bowl, mix together salsa, mayo, lime juice, and cilantro.

Pour mixture on top of salad.
Tips
