Shrimp Curry Cauliflower Rice Bowl

Ingredients

  • 8 oz uncooked, medium peeled, and deveined shrimp
  • ½ cup cabbage
  • ½ cup bean sprouts
  • 1 garlic clove, minced
  • ½ cup chicken or veggie stock
  • 2 tbsp. green onion, diced
  • 1 tsp curry powder
  • 1 tbsp. fresh cilantro, chopped
  • 1 tbsp. Walden Farms Amazin' Mayo
  • Sea salt & pepper, to taste
  • 1 cup cauliflower rice, cooked

Instructions

    Pan fry shrimp with cooking spray until pink and cooked through. Remove from heat and set aside.

    Saute cabbage and bean sprouts in 1 teaspoon of olive oil. Set aside with shrimp.

    Add remaining olive oil to pan oil with garlic. Heat until fragrant.

    Add stock choice, green onion, curry, cilantro, mayo, salt and pepper. Heat until bubbling.

    Add cooked shrimp and veggies. Toss together to heat.

    Pour over cauliflower rice and serve.
