Ingredients
- 1 ¾ cup shredded zucchini
- ½ tsp sea salt
- 8 oz lean ground beef
- Garlic powder, to taste
- Sea salt and pepper, to taste
- ½ cup chopped bell peppers
- ½ cup mushrooms
- ½ cup diced green onion
- 4 eggs
- 2 egg whites
- 1 cup pizza spaghetti sauce recipe or approved sauce
Instructions

Preheat oven to 400 degrees.

Remove zucchini after shredding.

Sprinkle salt over top and mix well. Set aside.

In a medium bowl, whisk together eggs and egg whites.

Halfway through cooking add bell peppers, mushrooms, and green onions. Drain excess fat.

Lay the zucchini on several paper towels to absorb moisture.

Mix zucchini in egg mixture.

Spray a 9x9 baking dish with cooking spray.

Evenly layer beef, sauce, and egg mixture on top.

Season with salt and pepper.

Bake 20-25 minutes or until eggs have fully cooked.
Tips
