Ingredients
- 1 tsp olive oil
- 8 oz boneless, skinless chicken
- 1 tsp olive oil
- 1 cup heart of palm linguine
- 1 cup mushrooms, sliced
- 2 garlic cloves, chopped
- 2 tsp olive oil
- 1 cup baby spinach
- ½ cup approved tomato sauce
- Italian seasoning, to taste
- Sea salt
Instructions

Preheat oven to 400 degrees.

Drizzle 1 tsp. olive oil over chicken and sprinkle with Italian seasoning.

Place on a greased baking sheet and bake for 22-26 minutes or until chicken reaches an internal temp of 165 degrees.

Rinse and drain linguine. Place in a small saucepan with water and dash of salt. Boil for 5-10 minutes. Drain and set aside.

Place mushrooms and garlic into a skillet with the remaining 2 tsp. olive oil. Cook until mushrooms are soft.

Add spinach and more Italian seasoning. Stir together until spinach is cooked down.

Add tomato sauce and mix. Add linguine and mix.

Plate chicken and top with linguine sauce.
Tips
