Instapot Beef Stroganoff

Instapot Beef Stroganoff

Ingredients

  • 1 lb cauliflower florets
  • 1 cup plus ½ cup bone broth (no fat/no sugar)
  • 1 cup green onion, chopped
  • 8 oz lean ground beef
  • ¾ cup mushrooms, chopped
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • 2 tsp garlic powder

Instructions

    Place cauliflower in Instapot with 1 cup bone broth. Pressure cook on high for 2 minutes, then manually release pressure.

    Blend cauliflower and broth until creamy. Measure out 1 cup for this recipe.

    Set Instapot to saute. Saute onion and ground meat for 3 minutes; it should not be cooked through.

    Add remaining broth, mushrooms, seasonings, and 1 cup of the creamed cauliflower from earlier.

    Close Instapot lid and cook on high pressure for 8 minutes.

    Manually release pressure.

Tips

Refrigerate or freeze the remaining 2.5 cups of creamed cauliflower. To add a ShiftMeal, serve with SSG toasted Brown Bread or add in a prepared package of the SSG Orzo Pasta after Stroganoff is cooked. SSG notes (per serving) Protein: 1 Veggies: 1
