Halibut with Picante Sauce

Halibut with Picante Sauce

Ingredients

  • 1 small radish, finely chopped
  • ¼ cup yellow pepper, diced
  • 1 tbsp. fresh lemon juice
  • ¼ cup cucumber, peeled and diced
  • ¼ cup tomato, diced
  • 2 Dashes of hot sauce
  • ⅛ tsp sea salt
  • 5 oz raw Halibut
  • Fat free and calorie cooking spray
  • 3-4 raw red onion rings (optional)

Instructions

    Preheat oven to 375 degrees.

    In a small bowl combine radish, yellow pepper, lemon juice, cucumber, tomato, hot sauce, and salt.

    Place fish on a lined baking tray. Spray with cooking spray.

    Top fish with the vegetable mix and bake for 10-15 minutes until center flakes easily with a fork.

    Remove from oven, plate and top with onion.

Tips

Serve on top of mashed cauliflower potatoes, cauliflower rice, or more veggies. Toast some SSG Brown bread and serve with a drizzle of olive oil. SSG notes (per serving) Protein: 1 Veggies: 1
