Ingredients
- 2 medium chayotes
- 3 cloves of garlic, minced
- ½ cup chopped peppers
- 1 cup + 2 tbsp. vegetable broth
- 2 cups diced tomatoes
- 2 tbsp. tomato paste
- 1 tbsp. oregano
- 1 tbsp. lemon juice
- Sea salt and pepper, to taste
Instructions

Peel chayote and slice it down the middle.

Remove the inner core and dice up (approx. 4 cups worth).

In a large skillet, saute garlic and bell peppers in 2 tablespoons of vegetable broth until tender.

Add remaining vegetable broth, chayotes, tomatoes, tomato paste, oregano, and lemon juice.

Cover and simmer for 15-20 minutes until chayotes are soft.
