Blueberry Rhubarb Waffles

Blueberry Rhubarb Waffles

Ingredients

  • 1 large egg white
  • 2 tsp olive oil
  • 1-2 tbsp water
  • 6 drops lemon Stevia (optional)
  • ½ tsp lemon zest
  • ¼ cup rhubarb compote (see recipe)
  • 1 ShiftSetGo Blueberry Pancake

Instructions

    Preheat waffle iron. In a small bowl whisk egg white. Add in oil, water, Stevia, lemon zest, and rhubarb compote. Mix well. Batter will be thin. If pancake does not dissolve add in an additional tablespoon of water.

    Add the SSG Blueberry Pancake. Mix well.

    Let rest covered for 5-10 minutes to hydrate blueberries.

    Pour into a Pam sprayed waffle iron until golden brown on both sides.

Tips
