1 (14 oz) can black beans, rinsed, drained
1 (7 oz) can sweet corn, rinsed, drained
1 red bell pepper, seeded, sliced
1 bunch cilantro, coarsely chopped
5 oz hot salsa (or mild if preferred)
- In a medium bowl add the beans, corn, red pepper, cilantro and salsa. Stir to combine. Serve or store in an airtight container for up to 3 days.
Try serving with guacamole and/or tortilla crisps.
