Nothing is easier than this unique go-to dill pickle soup, and the fact that it tastes amazing and is loaded with veggies is such a bonus! Who knew dill pickles could be so versatile?

1 cup cauliflower florets
1/2 cup chopped dill pickles
1 ShiftSetGo Cream of Broccoli Soup Mix
1-1/2 cups low sodium vegetable broth
1 cup packed baby spinach, finely chopped
Sea salt and black pepper, to taste
- Steam cauliflower until very tender, about 10 minutes. Place in a blender along with the dill pickles, broccoli soup mix, and vegetable broth. Process until smooth. Transfer to a medium saucepan.
- Heat soup over medium heat just until simmering. Remove the pan from heat, and add the spinach and a pinch of salt and pepper. Stir to combine.
- Serve immediately.
Dill Pickle Soup Tips
Add a diced green onion for garnish. Serve with warm brown bread with a drizzle of olive oil for another shift meal and daily oil serving.
