Strawberry Rhubarb Ice Cream
Rhubarb is no slouch when it comes to health benefits. This is thanks to the high number of antioxidants called anthocyanins (hence its beautiful red color). It gets its sour taste from high levels of malic and oxalic acid (you might want to watch out if you are prone to kidney stones). This sour veggie is often combined with a sweeter fruit like strawberries to help balance that sweetness and add some complexity and depth of flavor. Our strawberry rhubarb ice cream recipe is a super-quick and easy way to combine sweet and sour into a delicious frozen treat while giving you a healthy boost of polyphenols and fiber.

Ingredients
1 ShiftSetGo Strawberry Cream Pudding & Shake mix
8 oz water
2 cups frozen rhubarb
Instructions
- Place all the ingredients in a blender. Blend until well mixed and smooth.
- Scoop out and serve immediately or freeze to enjoy later.
Tips:
Pre-chop, measure out, and place the rhubarb in a zip-lock freezer bag. You can also buy it at the store pre-cut and frozen. Either way, it will make it even quicker to make this tasty strawberry rhubarb ice cream the next time you’re craving it!
