This low-carb cilantro lime cauliflower rice takes just a handful of simple ingredients to produce a tasty, satisfying side dish in less than 15 minutes!

1 TBSP olive oil
2 cups frozen riced cauliflower
1 garlic clove, minced
Zest of ½ lime
Fresh cilantro, chopped
Sea salt, to taste
Fresh lime juice
- In a medium skillet, add olive oil in a circle to coat the pan evenly.
- Add cauliflower and garlic.
- Sauté until tender and starting to lightly brown.
- Add lime zest, cilantro, salt, and lime juice.
- Serve warm.
