Roasted Radishes

This roasted radish recipe can convert even the most avid radish hater into a fan. When cooked, radishes lose their spiciness and get considerably milder and sweeter. This can make these low-calorie, low-carb little jewels a great replacement for carb-heavy, high-glycemic potatoes. And no, they don’t taste exactly like potatoes when they’re cooked, but they are very similar.

When compared to potatoes, radishes are more nutritious—they contain more water, calcium, vitamin C, and folate with less starch and sugar. Radishes may also help protect against diabetes by reducing the accumulation of free radicals and glucose absorption while improving glucose uptake and energy metabolism.

Ingredients
2 cups halved radishes

Fresh or dried Italian seasonings
1 TBSP olive oil
Sea salt and black pepper, to taste 

Instructions 

  1. Preheat the oven to 400°F.
  2. Toss all ingredients together in a medium bowl, making sure to coat all the radishes with the oil and seasonings.
  3. Place the radishes on a greased cookie sheet and bake for 15-20 minutes, or until tender and golden.    

Tips
Try adding some minced garlic cloves or other spices like rosemary.

If you don’t want to use the oven, these roasted radishes also turn out great in an air fryer. Simply cook at 400°F for about 18 minutes. Be sure to shake the basket, or give them a stir, halfway through cooking.
