When the cold weather hits, there’s nothing better than a big bowl of warm chili. This hearty beef chili is filled with veggies and spices. It’s ready in under 30 minutes but tastes like it cooked for hours. Add your favorite green zone veggies like arugula, shredded zucchini, green onions, or diced tomatillos to get in even more nutrition.

1 tsp olive oil
4 oz lean ground beef
1 clove garlic, minced or pressed
1 cup riced cauliflower, fresh or frozen
1 cup crushed fire-roasted tomatoes

- Heat oil in a medium skillet over medium-high heat. Add the ground beef and cook, stirring to break up any large pieces, until cooked through and no longer pink, about 5 minutes.
- Add the garlic and sauté for 1 minute.
- Add the riced cauliflower and sauté until cauliflower has softened, about 5 minutes.
- Add the tomatoes and the ShiftSetGo Vegetable Chili Mix and stir until thoroughly combined. Bring just to a boil, then reduce heat to medium-low and simmer, uncovered, for 5-6 minutes, or until slightly thickened and heated through. Serve!
