Fresh Cajun Salmon with Colorful Corn Salsa
This spicy cajun salmon is fresh and easy to make. It’s a delicious, healthy choice for a quiet dinner at home or for serving at a summer get-together. The sweet corn salsa is a tasty use of fresh corn on the cob before fall arrives. Ingredients
2 ears of corn, cooked
10.5 oz cherry tomatoes, quartered
1 cup fresh cilantro
4 salmon fillets (6oz each)
2 TBSP Cajun seasoning
2 TBSP olive oil
Directions
- Heat the oven to 425°F. Mix the Cajun seasoning with the olive oil and rub all over the salmon. Place the salmon on a baking tray or on an oven-proof dish. Bake in the oven for 12-15 minutes, until cooked through.
- Use a small knife to cut down the side of the corn cobs to remove the kernels and place them in a large bowl. Add the tomato and cilantro and toss to combine.
- To serve, divide the salsa between 4 serving plates. Top with the cajun salmon and serve immediately.
Cajun Salmon Tips
Try adding diced red and green peppers to the salsa for even more pops of color.
While we think the spice level of this cajun salmon is perfect, feel free to back off on the spice a bit to suit your own spice tolerance.
Serve with a bit of lime juice.
