Chocolate Chia Pudding

Ingredients
1/2 cup chia seeds
1-1/2 cups unsweetened almond milk
1 tsp pure vanilla extract
1/2 tsp ground cinnamon
1/4 tsp espresso powder
1 TBSP cocoa powder
2 TBSP pure maple syrup
Berries, optional
Instructions
- Place all ingredients in a blender and process until almost smooth and most of the chia seeds have broken down. Divide mixture between 2 mason jars or glasses, top with berries, if using, and serve immediately.
Tips:
This can be left in the fridge for about 4-5 days (though we doubt it will ever last that long!).
