Blueberry Lemon Zucchini Waffles

While we often use them as a vegetable, zucchini is actually a fruit. Super versatile, they can go savory or sweet, so make the perfect “veggie” addition to these delicious zucchini waffles!

Ingredients

1 ShiftSetGo Blueberry Pancake Mix
1/2 tsp cinnamon
1 large egg white
1 tsp lemon juice
1 tsp lemon zest
6 drops lemon stevia, optional
2 tsp olive oil
1/4 cup zucchini, grated, squeeze out excess liquid 

Instructions

  1. Preheat the waffle iron.
  2. In a medium bowl whisk together the blueberry pancake mix and cinnamon.
  3. In a small bowl, whisk the egg white. Add the lemon juice, lemon zest, stevia, olive oil, and zucchini. Stir well to combine.
  4. Add the wet ingredients to the dry. Mix until smooth.
  5. Let the batter rest, covered, for 5-10 minutes to hydrate the blueberries.
  6. Spray the waffle iron with cooking spray. Pour batter into waffle iron and cook until golden brown.
