8 oz lean ground beef
Salt and black pepper, to taste
2 cups shredded lettuce
1/4 cup chopped yellow onion
1/4 cup chopped mini bell peppers, variety of colors
1/4 cup diced tomatoes
1/2 cup chopped, sugar-free dill pickles
2 TBSP Walden Farms Thousand Island dressing
- Spray a medium skillet with non-stick cooking spray and heat over medium-high heat.
- Add the ground beef and season with salt and pepper. Cook, stirring to break up any large pieces, until cooked through and no longer pink. Remove pan from heat, then carefully drain off and discard any excess fat.
- Place the lettuce in a medium bowl. Add the ground beef, onions, bell peppers, tomatoes and pickles. Drizzle with the Thousand Island dressing and toss to coat. Serve immediately.
To get even more of that traditional burger taste, try topping with a bit of yellow mustard and Walden Farms Ketchup.
