Baked Carrot Fritters

There’s something so satisfying and comforting when you bite into a warm fritter. Filling yet guilt-free, these carrot fritters are a must-make!

4 medium carrots, grated
1 small egg
4 TBSP all-purpose flour
1 clove garlic, minced
1 tsp ground cumin
Sea salt and black pepper, to taste


  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper. Set aside. 
  2. In a medium bowl stir together the carrots, egg, flour, garlic, cumin and a pinch of salt and pepper. Scoop heaping tablespoons of the batter and place them, evenly spaced, on the prepared baking sheet. Flatten each slightly with the back of the spoon to form a round fritter. Bake 12 minutes, then carefully flip them over. Bake an additional 10-12 minutes or until golden brown and set. Serve hot or cold.
