Asparagus Mockamole

2 C. Asparagus, blanched for 10 min, cooled
Lime juice
1/2 C. onion, diced
1/2 C. Roma tomatoes, diced
1 TBSP cilantro, chopped
1 clove garlic, minced
1/2 jalapeno seeded, minced
1/2 tsp cayenne
1/2 tsp ground cumin
1/2 tsp each sea salt and pepper
1 TBSP olive or grapeseed oil


  1. In a food processor, ninja or bullet blender, process the asparagus and lime juice until smooth; set aside.
  2. In a small bowl, combine all other ingredients. Mix well.
  3. Fold the smooth asparagus in and mix well.
  4. Serve immediately.
