Apple butter makes the perfect center for this apple danish

Apple Danish with Apple Butter

Perfect for breakfast or brunch, this delicious apple danish is the ideal treat for when you’re craving a taste of fall. Unlike other danish pasty recipes, you won’t find an overload of sugar with these. Just crisp, hearty fall flavor and a surprising amount of wholesome nutrition!

Ingredients 
ShiftSetGo Apple Cinnamon Oatmeal packets
1 tsp baking powder
1 stevia packet (1g)
1/2 tsp cinnamon
2 large eggs, whisked
1 cup grated zucchini, squeezed between paper towels to remove excess water
4 TBSP Walden Farms Apple Butter

Instructions 

  1. Preheat oven to 350°F. Spray a 6-cavity muffin top (or whoopie pie) pan with cooking spray. Set aside. (You may also use a traditional muffin pan but the shape will be different and may require additional baking time.)
  2. In a small bowl combine the ShiftSetGo oatmeal packets, baking powder, stevia, cinnamon, eggs and zucchini. Stir until fully combined. Divide batter evenly between the 6 muffin top cavities.
  3. Using the back of a spoon, make a well in the center of each danish. Bake 10 minutes or until lightly browned and cooked through. Cool completely.
  4. Fill the well of each danish with equal amounts of apple butter. Serve!
